CREAMED DRIED BEEF

1/4 c (1/2 stick) oleo
1 medium onion, chopped
1 (3 to 3 1/2 oz.) pkg. dried
beef
1/4 c. flour
1 c. shredded Cheddar cheese
1 (4 oz.) can mushrooms
2 c. liquid (liquid drained
from mushrooms plus milk to
measure 2 c.)

Saute onions in butter until transparent (soft). Add
dried beef, cut into very narrow strips, stir occasionally to
let flavors blend. Add flour and stir, let it get "pasty", add
liquid, stirring until slightly thick. Add cheese, to thicken
more. Add mushrooms and heat thoroughly. Serve on toast,
biscuits, mashed potatoes or in patty shells. I have also used
large puffs, cut open and filled. Replace top and pour sauce
on top. Crepes may also be used.
