BARBECUED COLORADO ROAST BEEF

Prepare a charcoal fire and let coals become a
consistent even white color. Take a roast beef and cut slits
in it at random spots and insert some garlic cloves into them.
Pack the entire roast with at least 1/4-inch covering of
mustard. Take rock salt of the crystal type used on sidewalks
in wintertime and pack into the mustard over entire roast.
Place prepared roast directly on top of glowing charcoal fire
coals. (Not on a spit or grate.) Allow 15 minutes per side
rotating 4 times (15 minutes each 4 sides). For roast over 4
pounds allow 20 minutes per side. Remove roast and scrape off
salt covering, slice and serve.
