SWEET AND SOUR PORK WITH RICE

1 1/2 lb. pork, cut in cubes
(I use a pork butt)
1 tsp. salt
2 Tbsp. soy sauce
1/2 tsp. garlic powder
1 jar prepared sweet and sour
sauce
1/2 c. pineapple tidbits or
chunks

Slowly boil pork in 2 cups water and salt, soy sauce and
garlic powder until very tender. Cut off all fat and cut in
1-inch cubes. Put in saucepan with sweet and sour sauce and
pineapple. Add about 1/4 cup pineapple juice. Simmer slowly
to get flavor blended. Serve over rice.
2/3 c. uncooked rice
2 Tbsp. vegetable oil
1 tsp. salt
1 1/2 c. boiling water
1 medium onion, finely chopped
2 stalks celery, finely
chopped
1/2 green pepper, finely
chopped
fresh mushrooms, if desired
Cook rice until golden brown in hot oil. Stir to
prevent burning. Add salt, water and soy sauce. Cover and
cook for 20 minutes. Add chopped vegetables and 1/4 cup more
water. Cover tightly and cook 10 minutes more.
Homemade sweet and sour sauce may be made as follows.
Simmer together:
1/2 c. catsup
1 1/2 c. brown sugar
1/2 c. vinegar
1/2 c. crushed pineapple
1 tsp. chopped onion
celery, may be added
1 Tbsp. cornstarch
small amount of water
Add cornstarch and water to thicken slightly.
