SOUTHERN FRIED CHICKEN WITH MILK GRAVY

1/2 c. all-purpose flour
1 tsp. garlic salt
1/2 tsp. pepper
1 (about 3 lb.) fryer, cut up
vegetable oil

Combine flour, salt and pepper in bowl. Roll chicken
pieces in flour mixture to coat. Place in large skillet that
has been heated with 1/2-inch oil. Brown on both sides.
Reduce to medium, cover and cook 30 minutes or until chicken is
tender. Drain well on paper towels.
Variation: Smothered Fried Chicken. Add 1/2 to 1 cup
water to chicken after it is brown, cover and follow directions
above. Serves 4.

Milk Gravy:
2 Tbsp. seasoned flour,
reserved from Southern
Fried Chicken recipe above
1 c. milk
2 Tbsp. oil , reserved from
above Southern Fried
Chicken recipe
Remove all oil except for 2 tablespoons. Mix flour and
milk together. Add to oil using a strainer, stirring constant-
ly until thickened and bubbly. Serve with fried chicken.
