LONDON BROIL MARINADE

2 Tbsp. oil
2 Tbsp. vinegar
2 Tbsp. soy sauce
2 cloves garlic, crushed
1 tsp. cracked black pepper
1/4 tsp. thyme or basil
1 1/2 lb. cheap steak (1-inch
thick round, flank or cut
from roast)

Blend oil, vinegar, soy sauce and seasonings for mari-
nade. Pierce steak with fork and add to sauce; turn often.
Let stand 1 hour at room temperature or longer in refrigerator.
Broil until medium rare. Cut across grain into thin diagonal
slices. Pour leftover marinade over all before serving.
