CUDIGHI (ITALIAN SAUSAGE)

Cudighi is native of upper Michigan. It is traditional-
ly served on a large roll with melted Mozzarella cheese and
pizza sauce, but it's great on pizza or in spaghetti sauce.

3 3/4 to 4 lb. ground pork
butt
2 Tbsp. salt or less
1 Tbsp. black pepper
1 tsp. onion powder
1 tsp. paprika
3 tsp. sweet basil
2 Tbsp. Italian seasoning
ground fennel to taste
2 tsp. crushed red pepper
flakes or 1 tsp. cayenne
pepper (hot)
Mix all ingredients thoroughly. Shape into rectangular
patties. Freeze for future use, if desired. Enjoy! Fry
patties at time of use.
