CONCH FRITTERS

1 egg
2 Tbsp. water
3 c. ground conch (or parboil,
pound and dice conch)
1 large onion, chopped
1/2 green pepper, chopped
1 tsp. salt
hot pepper sauce to taste
1 c. flour
1 tsp. baking powder

Beat the egg and water together and add to ground conch.
Stir in onion, pepper and seasonings. Sift flour and baking
powder together and mix thoroughly and quickly into conch
mixture. Roll into small balls and fry in deep fat heated to
375 degrees until golden brown. Drain and serve hot with wedges of
lime and chili sauce.
