BASQUE COD FISH

5 Tbsp. oil
1 large onion
1 can tomato sauce
1 lb. frozen cod fish
1 can pimento pepper
1/2 c. bread crumbs

Brown cut-up onion in the oil (slowly). You may add a
little garlic if desired. Add tomato sauce and simmer 5
minutes. Cut cod fish in 1/2 slices and add to tomato sauce.
Simmer 1/2 hour or until cod is tender and flaky. Add whole or
diced pimento. Sprinkle bread crumbs on top and stir just
enough to mix. This will thicken the sauce. This can all be
done in a heavy frypan, then transferred to serving dish.
