4 to 5 lb. chicken thighs,
salted to taste
1 clove garlic, minced
1 (1-inch) piece ginger,
1/2 c. soy sauce
1 c. ketchup
2 oz. rice wine or dry sherry
1 tsp. salt
2 Tbsp. hoisin sauce

Blend all ingredients together. Pour over chicken and
marinate for a few hours or overnight. Bake on rack in 325 degrees
oven for 1 hour.
