JOANNE'S BAKED ZITI

2 lb. ziti, cooked
3 lb. Ricotta cheese
1 lb. Mozzarella cheese, diced
3 eggs
1/2 c. Parmesan cheese
3 Tbsp. parsley flakes
3 to 4 qt. spaghetti sauce
salt and pepper
3 c. mini meatballs (optional)

Prepare sauce. If using mini meatballs, cook them in
sauce for about 1 hour.
In large bowl, combine Ricotta, Mozzarella and Parmesan
cheese, eggs, parsley, salt and pepper to taste; stir until
well blended.
Cook ziti as directed; drain. Put back in pot with
enough sauce to coat well. Gently stir in cheese mixture. Add
meatballs, if desired and stir gently.
Coat bottom of 11 x 16-inch baking dish with sauce.
Pour in pasta mixture and spoon sauce on top. Cover with foil
and refrigerate up to 2 days.
Heat refrigerated pasta at 325 degrees for approximately 1
hour. If being heated directly after preparation, then heat
for only 20 to 30 minutes at 325 degrees. Makes 10 to 12 servings.
