POACHED SALMON (MICROWAVE)

1 lb. salmon fillets (3/4-inch
thick)
3 Tbsp. milk

Place salmon fillet in non-metallic dish with thicker
edges toward the outside. Sprinkle with the milk. Cover with
lid or plastic wrap. Cook on high in microwave for 5 minutes.
(If fish flakes, it's done. If not, cook one minute more.)
Serve hot or cold.
Recommended sauces: Lemon butter, soy butter, pesto or
sour cream and dill. Serves 2.
