ZUCCHINI SAUSAGE BAKE|
1 lb. bulk Italian sausage
5 Tbsp. unsifted flour
6 c. sliced zucchini, about 6
1/2 c. chopped onion
2 Tbsp. butter or margarine
1 (16 oz.) container cottage
1/4 c. grated Parmesan cheese
2 eggs, well beaten
1/2 tsp. garlic powder
1 c. (4 oz.) shredded Cheddar
Preheat oven to 350 degrees. In large skillet, brown sausage,
breaking into small pieces. Drain; toss with 1 tablespoon
flour. Spread on bottom of 11 x 7-inch baking dish. In the
same skillet, cook zucchini and onion in butter until tender,
but not brown. Remove from heat and toss with remaining flour.
Spoon 1/2 of zucchini mixture over meat. In medium bowl, mix
cottage cheese, grated cheese, eggs and garlic powder. Spoon
evenly over zucchini layer. Top with remaining zucchini. Bake
30 minutes. Top with Cheddar cheese; bake 2 minutes. Serve
hot. Makes 6 servings.
