COLLARD GREENS WITH HAM

6 lb. collard greens, trimmed
and coarsely chopped
1 meaty ham bone (about
1 1/2 lb.)
5 c. water
salt and pepper to taste
2 Tbsp. distilled white
vinegar

In large saucepan, combine greens, ham bone, water,
2 1/2 teaspoons salt and 1/2 teaspoon pepper. Bring to a
boil. Reduce heat and simmer, uncovered, 1 1/2 hours. Add
water, if necessary. Remove ham bone. Shred meat and return
to pan. Add more salt and pepper to taste, if needed. Stir in
vinegar. Makes 8 servings.
