1 c. flour
1 1/2 tsp. baking powder
2 tsp. sugar
1/4 tsp. salt
1/3 c. milk
1 egg
2 c. cooked eggplant

Sift dry ingredients. Beat egg and milk together; add
slowly to dry ingredients, stirring constantly. Add cooked
mashed eggplant. Drop by spoonful into deep fat. Cook until
golden brown.
