SWEET POTATO CASSEROLE|
3 c. mashed sweet potatoes
1 c. sugar
2 eggs, beaten
1 tsp. vanilla
1/2 c. butter
1/2 c. milk
Cook potatoes until tender. Drain and mash or puree.
Combine potatoes with sugar, eggs, vanilla, milk and butter.
Place in shallow 1 1/2-quart casserole and top with:
1 c. brown sugar, packed
1/3 c. flour
1 c. chopped nuts
1/3 c. butter
Combine all ingredients until like cornmeal. Top sweet
potato casserole with mixture. Bake in preheated 375 degrees oven for
30 minutes. Makes 4 to 6 servings.
