POTATO PANCAKES

6 large potatoes, peeled,
uncooked and finely
shredded
1 large onion, finely grated
2 eggs, beaten
2 Tbsp. flour
1 tsp. salt
1/2 tsp. baking powder
pinch of baking soda
pepper to taste

Peel potatoes and finely shred. Grate the onion and
place both the potato and the onion in a strainer to drain.
After a few minutes of draining, place the onion and potato in
a large mixing bowl. Add all of the other ingredients and mix
well. Heat a frying pan or electric skillet with about 1/4
inch of oil until moderately hot. Drop the potato mixture by
tablespoon into the hot oil. Fry until very well browned on
one side. Turn just once and brown on the other side. Drain
on paper toweling. Serve as a side dish with meat, fish or
fowl. These also go well with applesauce or sour cream. These
can be made in advance and kept very well when frozen.
