BUBBLE AND SQUEAK|
3 Tbsp. butter or bacon fat
1 onion, finely chopped
2 c. shredded cabbage (boiled
for 15 minutes)
2 c. mashed potatoes
Heat butter in large skillet and fry onion over low heat
for 5 minutes until softened. Add cabbage and stir over low
heat for 2 minutes. Fold in mashed potatoes until well blended
with cabbage. Press mixture lightly to form a large pancake.
Cook for 5 minutes until the underside has browned lightly.
Turn and brown on second side for 5 minutes (leftover potatoes
and cabbage are great done this way).
