SPINACH MADELEINE

2 pkg. chopped spinach
4 Tbsp. margarine
2 Tbsp. chopped onion
1/2 c. spinach liquid
1/2 tsp. salt
3/4 tsp. garlic salt
1/2 roll garlic cheese
2 Tbsp. flour
1/2 c. evaporated milk
1/2 tsp. pepper
3/4 tsp. celery salt
6 oz. jalapeno cheese
1 Tbsp. Worcestershire sauce

Cook spinach according to directions and drain. Save
liquid. Melt margarine over low heat. Add flour and blend
until smooth (not brown). Add onion and cook until soft. Add
liquid slowly and cook until smooth and thick. Add seasonings
and cheese (cut into small pieces). Stir until melted and then
combine with spinach. Place in casserole and top with buttered
crumbs. Flavor is improved if refrigerated overnight. Freezes
well.
