4 1/2 c. water
1 tsp. salt
1 lb. Uncle Ben's rice
1 tsp. red pepper
2 large garlic cloves, peeled
and chopped fine
1 bay leaf
1 lb. chicken giblets, cooked
and chopped
3 Tbsp. margarine
1 tsp. dried thyme
1 tsp. curry powder
3 Tbsp. cooking oil
1 lb. fresh pork sausage
1 c. chopped onion
2/3 c. chopped celery and
1 c. chopped green peppers
1 tsp. black pepper
1/4 c. chopped parsley
1/2 c. thinly sliced

Cook giblets and sausage until tender. Saute all
vegetables in oil (5 minutes). Add giblets, spices and chopped
garlic and vegetables together; simmer for 20 minutes. Cook
rice in 4 1/2 cups water with salt and margarine for 1/2 hour.
Mix all ingredients in saucepot; cover and let stand on low
heat for 15 minutes. Serves 8.
