CANDIED YAMS

12 small yams (or 6 large)
2 c. sugar
1 c. hot water
1 tsp. ground cinnamon
1 Tbsp. fresh lemon juice
3/4 c. melted butter or
margarine
1 tsp. salt

Peel yams and cut in 1/2 (1/4 for large). Put in
shallow baking dish. Mix sugar, water, cinnamon, juice, butter
and salt in a large saucepan. Bring to a boil and cook at a
boil for 8 minutes. Pour syrup over yams and bake about 1 hour
or until syrup is thick and potatoes soft. Baste and turn yams
over several times. Bake at 350 degrees.
