SPINACH MADELINE

2 pkg. frozen chopped spinach
4 tsp. butter
2 Tbsp. flour
3/4 tsp. celery salt
2 Tbsp. chopped onion
6 oz. pkg. jalapeno cheese
1/2 c. evaporated milk
1/2 c. liquor off spinach
1 tsp. Worcestershire sauce
2 tsp. black pepper
buttered bread crumbs

Cook spinach according to package directions. Drain and
reserve 1/2 cup liquor. Melt butter in saucepan over low heat.
Add flour, stirring until blended and smooth, but not brown.
Add onions; cook until soft but not brown. Add 1/4 cup liquor
and milk, slowly, stirring constantly to avoid lumps. Cook
until smooth and thick. Continue stirring and add cheese,
which has been cut into small pieces. Stir until melted.
Combine mixture with cooked spinach. Put into casserole dish.
Top with buttered bread crumbs. Bake at 350 degrees until hot, 30
minutes. May be frozen and heated later.
