BAKED CURRIED ZUCCHINI

1 egg
1 c. flour (all-purpose)
1 tsp. salt
1 tsp. curry powder
1/4 tsp. freshly ground pepper
3 medium zucchini, cut into
1/4-inch slices
olive oil
additional curry powder
(optional)

Preheat oven to 400 degrees. Generously grease baking sheet.
Beat egg well in small bowl; set aside. Combine flour, salt,
curry and pepper in shallow dish. Dip zucchini in egg, then
roll in seasoned flour, covering completely. Arrange zucchini
on baking sheet. Sprinkle zucchini generously with olive oil
and, if desired, additional curry powder. Bake until crisp and
golden brown, turning once, about 20 minutes. Drain any excess
liquid. Serve immediately.
