FRESH ASPARAGUS (MICROWAVE)
(4 To 6 Servings)
1/4 c. water
2 lb. fresh asparagus spears
(as purchased, 1 lb. after
trimming)

Wash asparagus. Grasp stalk at either end and bend in
bow shape. Stalk will break where tender part of stalk starts.
Discard tough part of stalk. Place spears in a flat 1-quart
casserole. Add water. Cover. Microwave at Full power (High)
for 12 minutes or until tender, rearranging spears once. Let
stand, covered, 2 minutes. Drain.
Serving Ideas: Stir curry powder and lemon juice into
mayonnaise, then spoon over hot cooked asparagus spears.
Microwave slivered almonds in butter, then pour over hot cooked
asparagus spears. Marinate cooked asparagus spears in French
dressing, then serve on a cold plate.
