COLCANNON AND SAUSAGE|
4 c. shredded cabbage
1/2 tsp. salt
6 servings instant mashed
potatoes prepared according
1 c. sliced green onions
1 Tbsp. butter
1/4 tsp. pepper
1 lb. smoked sausages
Heat 1/2 cup water to boiling. Add cabbage and salt.
Cover and cook on medium heat about 8 minutes. Drain. Prepare
mashed potatoes adding green onions (or 1/2 cup regular onion,
substitute) to potato liquid. Fold cabbage into potatoes with
butter and pepper. Top with cooked sausages.
