GRANDMA'S BOHEMIAN RYE BREAD

1 pkg. dry yeast, dissolved in
1/4 c. warm water
2 c. warm water
2 1/2 tsp. salt
2 or 3 Tbsp. caraway seed
1/4 c. oil or melted
shortening
1 1/2 c. rye flour
5 1/2 to 6 c. white flour

Put 2 cups warm water in a 4-quart bowl. Add salt,
caraway seed and oil or melted shortening. Beat in rye flour.
Add dissolved yeast to this. With mixer on or by hand, mix in
white flour. Knead for 10 minutes and let it rest for 10
minutes. Knead more and add more flour, if needed. Let rise
until double. On cookie sheet, sprinkle flour, corn meal or
cream of wheat. Make dough into balls and place on sheet.
When double, slash 2 slashes on each loaf and paint with beaten
egg. Bake 40 minutes at 350 degrees.
