FRUITED BREAKFAST MUFFINS|
4 c. flour
1 c. sugar
1 c. brown sugar
1 Tbsp. baking soda
1 Tbsp. cinnamon
1 tsp. salt
4 c. grated carrots
2 unpeeled apples, cored and
1 c. raisins (optional)
1 c. coconut
1 c. chopped pecans
6 large eggs
2 c. regular oil
1 Tbsp. vanilla
In a large bowl, mix dry ingredients. Then add the
grated fruit, eggs, oil and vanilla. Stir until well mixed.
Spoon batter into well greased muffin tins. Fill 3/4 full.
Bake at 350 degrees for 30 to 35 minutes. Cool 5 minutes before
removing from tins. Makes 3 dozen. (These freeze well.)
