HONEY BREAD

6 c. flour
2 1/2 tsp. salt
2 Tbsp. soft butter
1 c. rolled oats (any kind)
2 c. boiling water
2 pkg. dry yeast
1/2 c. warm water
1/2 c. honey

Put oats in large bowl; pour boiling water over it. Let
stand for 1/2 hour. Soak yeast in lukewarm water for 5 min-
utes. Add to the soaked oats, salt, honey and butter. Stir in
yeast mixture. Next stir in 2 cups flour. Mix, then 2 cups
flour. Mix, then last 2 cups flour. Knead in (leave in bowl);
will be sticky. Knead 5 to 10 minutes. When flour all worked
in shape in mound. Cover with damp towel until double in size.
Cut down with sharp knife. Divide into 2 or 3 loaves. Press
well into pans. Let rise until double. Bake at 325 degrees for 45
minutes.
