LEMON TARTS WITH CHEESE PASTRY

1/4 lb. butter
1 lb. sugar
4 eggs, lightly beaten
juice and rind of 2 to 3
lemons

Melt butter. Add remaining ingredients and cook in
double boiler until very thick. Cool. Put in pastry shells.

Cheese Pastry:
1/2 lb. butter
1/2 lb. cheese, grated
2 c. flour
3 Tbsp. sugar
salt
Mix well. Chill 12 hours. Use plenty of flour when
rolling out. Bake in small muffin tins.
