SWEET POTATO PIE

5 to 6 medium-sized sweet
potatoes
1 c. sugar
1 stick butter (soft)
1 can Eagle Brand milk
5 eggs
1 tsp. nutmeg
1 Tbsp. vanilla flavor
dash of salt
2 uncooked pie shells

Boil potatoes until done. Peel and place in mixing
bowl. Beat at medium or high speed for 3 minutes. Remove
beaters and wash off potato strings. Continue to mix at medium
or high speed. Add ingredients in the order listed: sweet
potatoes, sugar, butter, Eagle Brand milk, eggs, nutmeg,
vanilla flavor and salt. Mix thoroughly. Pour into 2 unbaked
pie shells. Bake at 350 degrees until golden brown (approximately 45
minutes).
