ZUCCHINI BREAD

(If you like banana bread, you'll like Zucchini Bread,
it's very good!)

3 c. flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. nutmeg
1 c. chopped pecans (optional)
3/4 c. vegetable oil
3 eggs
2 c. sugar
2 tsp. vanilla
3 c. unpeeled, raw, shredded
zucchini
Combine flour, baking powder, baking soda, cinnamon,
nutmeg and pecans in mixing bowl. In second bowl, mix 3 eggs,
2 cups sugar and 2 teaspoons vanilla. Then add 3/4 cup vegeta-
ble oil and 3 cups unpeeled, raw, shredded zucchini. Stir this
mixture into the dry ingredients. Put into 2 greased loaf
pans. Bake at 350 degrees for one hour. Cool 10 minutes. (Serve
warm with butter or plain or cold!)
