CHICKEN PICANTE

1/2 c. chunky taco sauce
1/4 c. Dijon style mustard
2 Tbsp. fresh lime juice
6 boneless, skinned chicken
breast halves
2 Tbsp. butter
6 Tbsp. plain yogurt
1 lime, peeled and sectioned
chopped cilantro

Combine taco sauce, mustard and lime juice in large
bowl. Add chicken, turning once to coat; marinade at least 30
minutes. Melt butter in large skillet over medium heat until
foamy. Remove chicken from marinade. Cook the chicken,
turning once, about 10 minutes or until brown on both sides.
Add marinade and cook until chicken is firm to the touch and
marinade is slightly reduced and beginning to form a glaze,
about 5 minutes. Remove chicken to warm serving platter.
Raise heat to high; boil marinade 1 minute. Pour over chicken.
Place 1 tablespoon of yogurt on each breast 1/2 and top each
with lime segment. Sprinkle cilantro over chicken. Contains
225 calories per serving.
