1 slice whole grain bread
1/4 c. buttermilk
2 tsp. whole wheat flour
1 tsp. baking powder
1 tsp. honey
1/2 tsp. vanilla
1/4 tsp. cinnamon butter
1/4 c. unsweetened applesauce
Blend all ingredients, except butter and applesauce, in
blender or food processor until smooth. Lightly butter a
nonstick skillet. Make 3 inch (in diameter) pancakes by
spooning or pouring mixture into hot skillet. Brown lightly on
both sides. Top with a dollop of applesauce. Serves 2.
