(MINUTE) INSTANT RICE PUDDING|
1 c. instant rice
2 1/2 c. milk
1/4 tsp. salt
1/4 tsp. cinnamon
1/2 c. sugar
1/4 c. raisins (optional)
2 slightly beaten eggs
1/2 tsp. vanilla
Combine in saucepan the rice, milk, salt, cinnamon,
sugar and raisins (optional). Bring to rolling boil, stirring
constantly. Reduce heat; boil slowly 15 minutes, stirring
occasionally. Remove from heat. Slowly pour hot mixture into
eggs; beat vigorously. Add vanilla and sprinkle with nutmeg.
Let cool 10 minutes. Serves 4.
