FRIED APPLES

apples (2 medium apples equal
1 serving), cored,
quartered and sliced but
not peeled
2 Tbsp. bacon fat or butter
1/2 c. sugar

Melt fat in a skillet over low heat. Add the apples.
Cover the skillet and cook gently for 5 minutes or until the
apples are very juicy. Turn the apples over and sprinkle them
with 1/4 cup sugar. Cover and lower heat. Cook about 2
minutes more or until sugar is absorbed and apples are delicate
brown on the bottom. Sprinkle 1/4 cup sugar on apples and
remove from pan. Serve hot.
