HOMEMADE BANANA PUDDING

1/2 c. flour
1 c. sugar
1 egg
1 tsp. banana extract or
vanilla
3 c. milk
4 medium bananas

In a large pan, mix flour, sugar, egg and milk. Stir
well before placing on heat. Add banana extract and bring to
boil, stirring constantly, with a wooden spoon or rubber
spatula. As it starts to thicken, lower heat, keep stirring.
Pudding will thicken as it cools. Remove from heat and slice 1
banana and stir it into the hot pudding. Then cool completely
and slice the 3 remaining bananas into pudding. Now in a long
casserole dish or cake pan, layer vanilla wafers on bottom.
Pour half the pudding mix onto the wafers, then arrange another
layer of wafers and top with remaining pudding. Crumble
vanilla wafers on top. Now fetch George McFadden and watch
pudding disappear.
