"FIGGY PUDDING"

1/2 c. butter
1/2 c. shortening
1 c. sugar
3 beaten egg yolks (reserve
the whites)
1 c. milk
2 Tbsp. flavoring (can be
extract of rum or brandy)
1 apple, peeled and cored
1 lb. dried figs, ground or
chopped
lemon and orange peel
1 c. chopped nuts
2 tsp. orange rind
1/2 tsp. cinnamon
1/4 tsp. cloves
1/4 tsp. ginger
1 1/2 c. dried bread crumbs
2 tsp. baking powder

Beat butter and shortening until soft. Gradually add
sugar, egg yolks, milk, flavoring, apple and figs. Add sprin-
kles of lemon and orange peel and remaining ingredients.
Preheat oven to 325 degrees. Whip until stiff egg whites and fold
into mixture. Pour into ovenproof well greased bowl. Steam
slowly for 4 hours. Serve with cream or custard sauce.
This recipe brings to life the Christmas Carol, "We wish
you a Merry Christmas" and lots of "figgy" pudding.
