CHRIST-STOLLEN
(Holiday Bread)
1 1/2 sticks unsalted butter
4 1/4 c. flour
1 1/2 c. sugar
1 1/4 Tbsp. baking powder
1 Tbsp. vanilla extract
2 medium eggs
1/4 c. diced Citron
1/2 lb. cottage cheese
1/4 c. diced orange peel
1/2 c. currants
1/2 c. raisins
2/3 c. ground almonds
1/8 tsp. almond extract
1/4 tsp. rum extract
1/8 tsp. lemon extract
1/8 tsp. cardamom
1/8 tsp. nutmeg

Mix all ingredients and knead very well. On floured
area, roll out to a thick round cake and fold to a half moon.
Bake at 350 degrees for 30 minutes. Reduce heat to 325 degrees and bake 15
minutes. Reduce heat to 300 degrees for 20 minutes. After cooling
spread with melted butter and sprinkle thickly with powdered
sugar.
