FRESH PEACH COBBLER

2 1/4 Tbsp. cornstarch
3/8 c. brown sugar
3/4 c. water
6 c. sweetened sliced peaches
1 1/2 Tbsp. butter
1 1/2 Tbsp. lemon juice

Mix cornstarch, sugar and water. Add peaches and cook
until mixture is thickened. Add butter and lemon juice. Pour
into 13 x 9-inch baking dish. Top with:

Batter Topping:
1 1/2 c. sifted flour
1 1/2 c. sugar
1 1/2 tsp. baking powder
3/4 tsp. salt
6 Tbsp. soft butter
3 eggs, slightly beaten
1 Tbsp. sugar (for sprinkling
on top)
Combine all the ingredients, except the 1 tablespoon
sugar. Beat with spoon until batter is smooth. Drop by
spoonfuls on hot peach mixture, spreading evenly. (It spreads
over peaches while baking.) Sprinkle with the sugar. Bake in
hot oven at 400 degrees for 40 to 50 minutes. Serve with following:

Spiced Honeyed Cream:
Beat 2 cups heavy whipping cream until thick. Mix in 4
tablespoons honey and 1 teaspoon cinnamon. Serve with Fresh
Peach Cobbler.
