BUTTERSCOTCH PIE

2 c. brown sugar, packed
12 Tbsp. butter
1 c. hot water
3 heaping Tbsp. flour
1 level Tbsp. cornstarch
2 1/2 c. milk
2 eggs

Melt butter; add sugar, then the water. Boil this until
it scorches. (This is very important as it gives it the
butterscotch flavor.) Make a custard with the flour, corn-
starch, milk and eggs. Beat the eggs, flour and cornstarch,
then add milk. Cook until it begins to thicken, then add
butterscotch and cook until done. Pour into 2 baked pie
crusts.
