PINEAPPLE CASSEROLE

2 (20 oz.) cans chunk
pineapple, drain (save
juice)
7 Tbsp. flour
1 c. pineapple juice
1/2 c. white sugar
1/2 c. brown sugar
1/2 stick oleo (butter is
good)
1 c. shredded cheese

Combine pineapple and heat the remaining ingredients
until dissolved. (It will thicken a little. Stir to keep from
sticking.) Put drained pineapple in a greased casserole dish.
Pour cooked mixture over pineapple.

Topping:
1 c. crushed Ritz crackers
1/2 stick oleo or butter,
melted
Sprinkle crackers over pineapple mixture, then oleo over
all. Bake at 350 degrees for 20 to 25 minutes. If doubling recipe,
bake 1 hour at same temperature.
