BEST OATMEAL COOKIES

1 c. butter
1 c. granulated sugar
1/2 c. brown sugar
1 egg, beaten
1 1/2 c. all-purpose flour
1 tsp. baking soda
1 tsp. cinnamon
1 1/2 c. quick rolled oats
3/4 c. crushed walnuts, pecans
or raisins
1 tsp. vanilla

Keep butter in refrigerator until you are ready to start
creaming. Cut the sticks into about 8 pieces. Keep mixer
speed low. Add sugars. This method is better for most types
of cookies. If butter softened too much you have to add more
flour and that cuts down on the shortness or tenderness of the
cookies after creaming butter and sugars. Add beaten egg.
Sift together flour, baking soda and cinnamon, add to creamed
mixture. Add oats, nuts and vanilla. Chill dough for 1 hour.
Drop walnut-sized pieces of dough onto greased cookie sheets.
Bake in preheated 350 degrees oven for 7 to 10 minutes. Yields 6
dozen. These cookies bear the relationship to ordinary oatmeal
cookies that the Rolls Royce does to the bicycle.
