(Neapolitan Flan)
1/2 c. sugar
1 can sweetened condensed milk
5 eggs
3/4 tsp. vanilla
dash of salt

Melt sugar in a skillet until golden brown. Spoon
quickly over sides and bottom of a 1-quart baking dish. Let
Place condensed milk, eggs, vanilla and salt in blender
and blend thoroughly. Turn into prepared baking dish. Place
dish in baking pan and add hot water to come halfway up sides.
Bake at 325 degrees for 50 to 60 minutes, or just until a knife comes
out clean. Be careful not to overbake. Cool, then chill until
firm enough to unmold. Run a knife around edge and invert on
serving plate. Makes 6 to 8 servings.
