MOM'S PINEAPPLE UPSIDE-DOWN CAKE

4 Tbsp. butter or oleo
1 c. brown sugar
7 slices pineapple
1/2 c. shortening
1 c. sugar
3 beaten eggs
2 c. flour
1/2 tsp. salt
3 tsp. baking powder
2/3 c. milk
1 tsp. vanilla

Melt oleo in 10-inch cast iron skillet. Add brown sugar
and pineapple. Cream shortening and sugar together. Add
beaten eggs. Combine flour, baking powder and salt. Add
alternately with milk. Add vanilla and mix well. Grease sides
of skillet. Pour this mixture over the melted butter, brown
sugar and pineapple in bottom of pan. Bake at 350 degrees for 50 to
60 minutes. Invert on large cake plate.
