2 c. sugar
2 c. plain flour, sifted
1 1/2 c. salad oil
2 tsp. baking powder
1/2 tsp. salt
1 tsp. cinnamon
1 c. chopped pecans
3 c. grated carrots
1 tsp. vanilla
Sift together sugar, flour, baking powder, soda, salt
and cinnamon. Add salad oil, eggs and vanilla. Beat well.
Add carrots and pecans. Bake in 3 layers in greased and
floured cake pans. Bake at 350 degrees for 30 to 35 minutes.
Icing For Carrot Cake:
1 (8 oz.) pkg. cream cheese
1 box powdered sugar
2 tsp. vanilla
1/2 stick margarine
little milk, if necessary
Cream together cream cheese and margarine. Add powdered
sugar and vanilla. Spread on cooled cake.
