PEANUT BRITTLE

1 c. sugar
1 c. light cornstarch
1 c. water
2 c. raw peanuts
1 stick oleo
1 heaping tsp. soda

This recipe for peanut brittle is very crunchy, not hard
like most. The reason is the amount of butter used. This
candy will not make if raining.
Cook sugar, syrup and water over high heat, stirring
constantly until it threads, about 10 to 12 minutes. Sometimes
a little longer just until it threads real good. Add oleo and
raw peanuts; continue to cook, stirring constantly until
mixture turns darker in color and the peanuts start to crack,
about 10 minutes. Sometimes peanuts will not crack. At once
put in 1 heaping teaspoon soda and stir well. Pour onto
buttered cookie sheets while still foaming, spread thin. Let
cool and break into pieces.
