OLD-FASHIONED SOUTHERN POUND CAKE

1 (2 sticks) c. butter
3 c. sugar
6 eggs
8 oz. whipping cream
1 tsp. vanilla
3 c. flour

In large bowl, beat butter. Gradually add sugar and
beat with mixer 10 minutes (this is essential). Add eggs, one
at a time, and beat after each egg. In a small bowl, whip
cream and add to mixture. Add vanilla. With spoon, add flour;
mix well, but do not beat. Grease tube or Bundt pan and pour
cake mixture. Place in 325 degrees oven, not preheated. Bake for 1
1/2 hours; turn upside down after baking onto plate.
Variations to Southern Pound Cake: Instead of butter,
you can use Blue Bonnet margarine, lemon extract can be used,
instead of vanilla and Dream Whip, made according to direc-
tions, is what I used instead of whipping cream.
