PUMPKIN COOKIES

1 1/2 c. sugar
1 c. softened butter or
margarine
1 c. cooked pumpkin
2 tsp. vanilla
2 eggs
1 tsp. baking powder
2 c. all-purpose flour or
whole wheat flour
2 1/2 tsp. pumpkin pie spice
or cinnamon
1/2 tsp. salt
1/2 c. raisins
1/2 to 1 c. chopped nuts

Heat oven to 350 degrees. In large bowl, combine sugar, butter
or margarine, pumpkin, vanilla and eggs. Blend well with
mixer, then add dry ingredients. Stir in raisins and nuts.
Drop by spoonfuls on ungreased baking sheet. Bake for 12 to 15
minutes. Do not overbake. Cookies should be soft. Cookies
can be iced. (A cream cheese canned icing is good.) Makes
about 48 cookies; more if small.
For applesauce cookies, substitute applesauce for
pumpkin and increase flour by 1/2 cup. Use cinnamon, not
pumpkin pie spice.
