CREAM WAFERS

Wafer:

1 c. soft butter or margarine
1/3 c. whipping cream
2 c. flour
granulated sugar

Filling:
1/4 c. butter or margarine
3/4 powdered sugar
1 tsp. vanilla
few drops of water
food coloring

Mix thoroughly butter, cream and flour. Cover and
chill. Heat oven to 375 degrees. Roll about 1/3 of dough at a time
1/8-inch thick on well floured board. Cut into 1 1/2-inch
circles. Transfer rounds with spatula to wax paper that is
heavily covered with sugar; turn each round so both sides are
coated with sugar. Place on ungreased cookie sheet (about 40
rounds at a time), then prick 4 times with a fork (gives effect
of a cracker). Bake 7 to 9 minutes or until set, not brown.
Cool.
Prepare filling by creaming butter, powdered sugar and
vanilla. Add a few drops of water for desired consistency.
Section into 3 or 4 parts, adding different food coloring to
each part. Frost underneath side of wafer, adding second wafer
to make a sandwich-type cookie.
