PLUM CAKE

2 1/2 c. flour
1 rounded Tbsp. baking powder
1/2 c. sugar
1/2 c. butter or margarine
2 small eggs
pinch of salt (if butter is
not salted)

Cream butter and sugar. Add eggs, flour and salt; beat
until mixture is smooth. This can also be mixed by rubbing
butter into flour, beating eggs, sugar, salt, etc. for 2
minutes and making into a smooth dough. Dough can also be used
for lining tartlet pans or as bottom dough for various fruit or
nut slices.
Roll out dough on lightly floured board and place on
well-greased cookie sheet, pressing ends of dough against the
sides of the cookie sheet.
Cut plums in four and line up on dough skin-side down.
Bake at 325 degrees for 45 minutes to 1 hour. Take out and sprinkle
granulated sugar lightly over plums while hot.
When using blueberries add 1 tablespoon cornstarch mixed
in berries. After baking, sprinkle with sugar while hot, and
if desired, a little cinnamon.
