RED VELVET CAKE

1 1/2 c. sugar
2 eggs
2 1/2 c. self-rising flour
1 1/2 c. cooking oil
1 tsp. vanilla
1 c. buttermilk
1 tsp. vinegar
enough red food coloring to
make mixture red

Beat eggs; add sugar, cooking oil, vanilla and vinegar.
Sift flour; beat flour alternately with buttermilk. Add food
coloring and beat well. Bake at 350 degrees for 25 minutes in three 9
inch layer pans (greased and floured).

Red Velvet Cake Icing:
1 box confectioners sugar
1 (8 oz.) pkg. cream cheese
1 stick margarine
1 c. chopped pecans
1 tsp. vanilla
Mix cheese and butter; beat well. Add sugar, vanilla
and nuts.
